Some antioxidants are sterically hindered phenols that serve to prevent the primary oxidation step. But wait, what is oxidation? Oxidation is a chemical reaction that occurs when some kinds of stuffs get mixed up with oxygen. This reaction could lead to the substance changing in color, taste and smell, thus going bad.


The role of sterically hindered phenols in inhibiting free radical formation.
